Baking Bad Infusions is a 640g (0.95L) food-grade nitrous oxide cylinder (99.9%, E942) whose reason to exist is the bar rather than the pass. The bold novelty livery is made to be seen on a back bar, and the gas behind it is aimed at infusing cocktails, spirits and cold drinks as readily as it charges classic whipped cream.
One cylinder gives roughly 80 standard 8g charges — about 4 to 4.8 litres of finished cream, or several rounds of rapid drink infusion depending on how you dose. It threads onto standard 0.5L and 1L professional whipped-cream and infusion dispensers, so it drops into a kit you already run.
Who it suits: cocktail bars and dessert kitchens that want one cylinder covering both foams and infusions, and don’t mind paying a little over the plain value cylinders for the theatre. If you only ever make cream, an unbranded 640g in the Cylinders category does the same job for less.
